So we'll go and see the process from A-Z and we'll see what makes this pizza different from others and things they add in it and dont get caught like your brother lets go and check pizza of Ny212  Right now im at MM alam branch of Ny212. this place has a great ambience when you entre The theme is according to Newyork style in a very artistic way they've painted the walls with newyork streets on them Everything is decorated in a very artistic manner so when you entre you actually feel like its a proper pizza place behind me is its kitchen where pizza making process is going onn with its unique recipe i eat this alot but today ill experience that how they make this ill experience things like whats the process and what are the things going onn in the kitchen and ill be sharing that with you guys too its an open kitchen,if you're standing there ..you can easily see whats going onn in the kitchen here  the basic concept of live kitchen is that whoever is here to have some food should know whats going onn in the kitchen and how clean is it Im actually very fond of visiting places like thiswe enjoy the product but behind the scenes are special Im interested to know that whats in the factory?this is actually pizza factory Worker: thoroughly everything is cleaned on daily basis proper hygenic measures are followed Rhs: proper sanitization?Worker:Yes Rhs: so now which pizza's making we'

Worker: its maximum life is 7-8 hrs, but it is used before that because of alot off orders I just saw the process of pizza making but the dough making is about to start  dough will be made from the scratch and then the whole process This is the measurement jug,2000ml water is used we'll add the water first Rhs:ive seen the ovens which are closed,so whats this like? worker: this is a conveyor oven with a set temperature and the timing of the belt too according to the temperature it has a timer and it bakes according to that Other manual ovens need to be checked again and again  and there are greater chances of burning as well Rhs:Ans in this they place pizza from one side and this belt moves according to the temperature after crossing this all area, the ready pizza will come out from this side  Worker: This is our main chefRhs: so you are the master chef?worker: yess rhs:so you deal with all the chefs on other branches?Worker:he trains them Rhs: Should I Not take you with \me? When the dough is ready,they cut it into pieces  i used to think they set the pizza according to the size of the pan But they actually cut dough according to grams for all pizza sizes so they cut again and again to maintain the grams Pizza placed from that side is now coming out from this side now you can see the pizza is all ready now Rhs: Dough is ready in here?Worker: after making,we proof the dough at temperature 30.This is proofer Rhs: what happens after proofer?Worker:goes in this!Rhs: what happens there? Worker: Retarder,basically a chiller Rhs: so what are we going to do with our pizza now?Worker: 4 flavours Worker: This is our specialityRhs:anyone else is doing this?Worker:NO Rhs:Right!
